MCC Cocktail
50ml Elderflower Cordial

50ml Vodka

15ml Lemon Juice

50ml Boschendal Brut

 

Instructions:

Combine Cordial, Vodka, Lemon Juice in a shaker.

Shake on ice and strain into a Champagne Coupe.

Finish off with Boschendal Brut and garnish with a Verbena Blue Flower/ Mint Leave

Rose Cosmo

50ml Rose Cordial

50ml Vodka

25ml Cointreau/ Tripple Sec

15ml Lemon Juice

20ml Campari

 

Instructions:

Combine all ingredients in a shaker.

Shake on Ice and strain into a Martini glass.

Garnish with a Rose Petal.

Boschendal Tango Fizz

50ml Rooibos Lemon & Ginger Cordial

60ml Gin

50ml Tango Juice

5ml Egg White

Rosemary

50ml Tonic Water

 

Instructions:

Combine all ingredients in shaker.

Shake on ice and strain into a Wine Goblet.

Top off with Tonic water and garnish with Rosemary twig

Ingredients

2kg oxtail
100g flour
1 tsp salt
2 tsp coarse black pepper
2 tsp crushed fennel
2 tsp crushed coriander
4 carrots, diced
1 red onion, diced
6 leeks, chopped
1 celery stick, chopped
6 garlic cloves
1 sprig rosemary
3 sprigs thyme
250ml Boschendal red wine

Method
Coat the oxtail pieces with the seasoned flour and seal in a hot pan with oil on all sides.

In a deep casserole pot place the oxtail, carrots, onions, leeks, celery, garlic, spices and herbs.

Add red wine and cook, cover the oxtail with water and place in oven overnight on 100°C or on 160°C for 3 hours.

Cultivating Young Minds

Guided by Principal Martha Khumalo, our Excelsior School offers high-quality early education and care for the preschool children of our employees. With 84 eager learners and a devoted team of 18 staff, the school fosters a Montessori-inspired environment where creativity thrives. During the holidays, we remain open, providing a safe, nurturing space for the children while their parents work, with additional holiday programs available to accommodate their older siblings.

Additionally, we offer an After School program for children from Boschendal attending Grade R to Grade 3 at our neighbouring schools.

Beyond Classroom Walls

Janet Baxter spearheads various initiatives with the local community schools such as inviting children to the farm to understand regenerative farming practices, art projects in the forest as well as STEM projects with the local university. We are fortunate to also have a long partnership with the Ukwandu Puppet Company.

Pineapple Cordial Spritz

Treat yourself to a taste of the tropics with a refreshing and fruity blend of pineapple cordial and sparkling water. And if you feel like it, add a splash of rum.

Ingredients:

60 ml Boschendal pineapple cordial

90 ml sparkling water

30 ml white rum (optional)

Ice cubes

Dried pineapple, sliced lemon and mint sprig for garnish

Method:

Add pineapple cordial and white rum (if using), to a glass and stir.

Add sparkling water and ice

Garnish with a slice of lemon, dried pineapple and a sprig of mint.

 

Granadilla Fizz

A tantalising passion fruit mocktail that tastes like summer!

Ingredients:

50ml Boschendal passion fruit cordial

150ml sparkling water

Juice of 1 lime

Ice cubes

Sliced lemon for garnish

Method:

Pour 50ml of passion fruit cordial into a glass filled with ice.

Squeeze the juice of 1 lime into the glass.

Top up the glass with 150ml of sparkling water and stir.

Garnish with a lime wedge or slice.

Raspberry Mojito

A fresh blend of white rum, mint, lime, and the delightful twist of Boschendal raspberry cordial, topped with soda water and garnished with a sprig of fresh mint and a juicy raspberry.

Ingredients:

50 ml raspberry cordial

6-8 fresh mint leaves

Juice of half a lemon

Soda water

Ice cubes

Sliced lemon, mint and sprig for garnish

Method:

Pour in the raspberry cordial and the juice of half a lemon into a glass filled with ice.

Top up the glass with soda water, add crushed ice and stir.

Garnish with a sprig of fresh mint, a slice of lemon, and a few fresh raspberries.

We are delighted to share the news of our recent recognition at the 2023 Western Cape Prestige Agri-Awards. In a category featuring entries from esteemed farms across fifteen regions in the province, the Franschhoek region was announced as the best-performing region for this year’s competition, with Boschendal honoured as the best farm in this region for the sixth time.

The recognition is a testament to our commitment to regenerative farming, goal where we work is to replenish and generate our soil. Because for us, healthy soil means healthy food and ultimately, healthy people.

We are reimagining and redeveloping our Werf Food Garden, reflecting our commitment to sustainable practices, pioneering regenerative farming techniques, and an authentic farm-to-table experience.

The Countdown Begins

The wait is almost over!  By December 2023, our Food, Flowers, and Fynbos Garden will be in full bloom, offering a memorable experience. Early 2024 will see the completion of our captivating Rose Garden and Tree-Lined Avenue.

Textures and Tranquillity

Our Gardens have been designed by award-winning and internationally acclaimed Andy Jasper, Special Advisor to Boschendal, together with Landscape Architect James Furse-Roberts, and will be implemented by Alan Dawson Gardens in collaboration with the Boschendal gardens team.

 

The garden plan features an arc of vegetables and herb beds, carefully intersected with wooden planters for ease of management. These beds will not only provide the farm’s eateries with fresh produce but will also serve as a visual representation of the farm-to-table experience, connecting visitors to the source of their culinary delights.

The garden unfolds further with an arc of cutting flowers, fynbos, and a beautifully designed rose and sculpture garden. A nursery and greenhouse will nurture the growth of plants, while a picking garden allows visitors to harvest their own ingredients, engaging them in the farming process. A pavilion, benches and water feature invite moments of relaxation, nestled within lush greenery.

Nothing Will Go To Waste

Our old garden plants have been transferred to production plots and many trees and structures will be reused or donated to our partner charities, Bertha and Philippi Village.

Storytelling and Regenerative Farming

As part of the new garden plan, we will incorporate a model farm that showcases our regenerative farming techniques, emphasising their positive impact on the land. Guests will be able to witness first-hand the dedication and care we invest in sustainable agriculture, fostering a deeper connection with the food they consume.

The history of Boschendal stretches all the way back to 1685; when the young Cape Colony was an important refreshment outpost for ships of the Dutch East India Company as they travelled the Spice Route in the seventeenth and eighteenth centuries. Maritime trade brought all manner of interesting cultural traditions to our shores, not least of all Malaysian, Indonesian and East African recipes and spices that greatly enriched the local culinary landscape. These are the foundation of Cape Malay cooking; the flavours of which serve as inspiration for one of our favourite recipes from The Werf Restaurant: Masala Fish Dish.

Masala is a term from the Indian subcontinent for a varying blend of spices, often based on unique family recipes and handed down through generations of cooks. These spice mixes are used extensively in South Asian cuisine to add warmth and flavour, and here, the blend serves to brighten the poaching liquid in which the fish is cooked. With a base of onions, garlic and ginger, mellowed out with homemade tomato purée, Junior Sous Chef Leroy Sebybo adds his special masala blend to round out the rich flavours of this mouthwatering sauce.

As always at Boschendal, many of the ingredients are harvested fresh each morning from the Werf Food Garden. Two hectares of carefully tended vegetables, herbs and fruit are overlooked by the restaurant’s sunny terrace and provide an abundance of fresh, organic produce to the estate’s restaurants, picnic spots, farm shop and deli. The seasonal nature of these ingredients is the driving force behind Boschendal’s farm-to-table dining concept which inspires the chefs to be “guided by the garden”, creating menus that evolve with the harvest.

The fish used is farmed kabeljou, also known as kob, from a local, sustainable, SASSI-green-listed supplier. The flesh is succulent and firm, forming large flakes, which makes it the ideal fish for flash frying and then cooking through in the sauce, as the fillets continue to hold their shape. Served with a yoghurt emulsion, spring onion salsa and a handful of fresh mussels topped with crispy ginger, it’s no wonder this delicious dish is one of Chef Leroy’s favourites.

The fragrant warmth of the dish is perfectly paired with a chilled glass of Boschendal Demi Sec; a bubbly Chardonnay-Pinot Noir blend with just a hint of sweetness. Boschendal Wine Estate was, in fact, the second to produce what is now known as Méthode Cap Classique, using the traditional Champagne method of a second fermentation in the bottle. This award-winning MCC has a flourish of delicate bubbles and a well-rounded, creamy mouthfeel with appetizing minerality, good balance and a seamless finish.

It’s no wonder this delicious dish is one of Chef Leroy Sebybo’s favourites.

Nothing says “South African Heritage” quite like the smell of fresh, locally caught fish on the coals.

Chef Allistaire uses ethically-sourced Yellow Tail from one of our local like-minded suppliers accompanied by freshly steamed mussels on the fire to create the perfect braai day seafood salad. The mussels are warmed up in a creamy lemon sauce, then topped with fresh garden herbs and vegetable elements to counter the creaminess of the sauce, providing a delightfully balanced dish full of South African flavour.

This light and tasty salad pairs wonderfully with our 1685 Chardonnay from Boschendal Wines . This bold statement wine, which is big on aromas and flavours, has a lemon, cinnamon and nutmeg nose. Expect zesty citrus and ripe tropical fruit flavours. Well-balanced with a soft, buttery character from barrel fermentation and maturation, which adds to the complexity and roundness of the wine.

This light starter with a hint of zesty lemon and fresh garden herbs, is the perfect way to kick off your Heritage Day braai. Chef Allistaire’s recipe calls for fresh, ethically-sourced Saldanha Bay oysters, lightly poached in a dash of Cap Classique on the open fire.

This dish is best served with a homemade sauce of Cap Classqique, garlic, onion, peppercorn and thyme. Chef Allistaire suggests squeezing a dash of fresh lemon juice over your prepared oysters before serving to enhance the natural flavours of the oysters without overwhelming them.

You simply can’t go wrong with a chilled glass of our Boschendal Grande Cuvée Brut alongside this dish. With hints of citrus and creamy almond notes, this MCC is a well-balanced addition to the dinner party.
